The Poinsettia

One of our favorite holiday traditions is the Barajas Cocktail Classic—a competition to see which of us can make the most delicious, creative, and beautiful cocktails. After a devastating performance last year, Courtney started preparations over Thanksgiving. The result is this simple yet festive cocktail, named after her favorite Christmas decoration: the poinsettia.

Into a large cocktail shaker, add:

  • 2 oz. good bourbon (we like Maker’s Mark)

  • 2 oz. cranberry juice

  • 1 oz. rosemary-thyme simple syrup (recipe below)

Shake well & strain into a rocks glass with a large ice cube. Garnish with rosemary sprig & enjoy with family.

Rosemary-Thyme Simple Syrup

In a small saucepan, combine:

  • one cup sugar

  • one cup water

  • two sprigs rosemary

  • two springs thyme

Bring to a boil, stirring until sugar dissolves. Remove from heat and let steep for about an hour. Remove herbs, strain into a sterilized container and cool completely. Keeps for one month in the fridge.
